Held at Semi-Pro Brewing, Manilla St, East Brisbane

Following the debauched success that was the BBQ workshop, we’re holding another one, this time for seafood. Held by Brother Mikey from the infamous Shank Brothers BBQ.

WHAT YOU GET

  1. Learn 4 techniques including:

    • cedar planked salmon,

    • hot smoked oysters, and

    • how to perfect flame grilled prawns and bugs in true Shank style.

    Sample dishes cooked will be provided throughout the duration of the course.

  2. Each student gets a charcoal pack, a rub pack and some smokewood included. 

  3. Tasters of the Semi-Pro rainbow

  4. A Semi-Pro pint glass

  5. A brewery tour.

Class Level: Entry to mid level for those wanting to fast track their knowledge in low and slow BBQ using wood fire and smoke. This will be followed by a casual Q&A session.

Fast track your knowledge in:

• Smoking and grilling seafood on the BBQ.

• Fire management using charcoal and wood.

• Building and controlling smoke flavour.

• Meat preparation including flavour strategies.

• How to avoid over or undercooking your meat.

• Seafood selection and preparation

BBQ Type used: ProQ water smoker, Weber kettle, Weber Go Anywhere.

Seafood used: Salmon, Oysters, prawns, Moreton bay bugs.
